Dirty Dinner Pilot: May 19 at Calleva Farm -- "Springtime in the Garden"
This season's four-course Dirty Dinner will be prepared by Calleva's very own culinary geniuses, Eric "Flash" Hill, & our Farmer Ben Ritter. Flash & Ben are gathering a team of creative chefs who will amaze you with brilliant creations centered on the early spring harvest in Calleva's Growing Green garden. The menu will feature Calleva-grown produce: salad greens, spring onions, carrots, sugar peas, and other early veggies, plus spring chickens from our flock. Prepare for an incredible springtime feast in the garden.
What's For Dinner? Our May dinner menu:
- We'll start the evening with two delicious "mocktail" choices: a Strawberry Bellini, a sparkling drink featuring Calleva-grown berries & a twist of ginger, and Virgin Mule, also sparkling & featuring crisp ginger, along with muddled mint leaves from Calleva's herb garden
- Appetizers: goat cheese & herb tapas on fresh baguette, chicken liver pate with pickled radish, goat sausage meatball in a light broth & lightly fried dumpling filled with broccoli, ramps & spinach
- Fresh salad greens with roasted beets and light balsamic vinaigrette
- Bright green early pea soup with a dollop of sour cream
- Spring chicken, brined in herbs & vinegar and roasted to perfection -- served with wilted spinach & collard greens
- Dessert featuring fresh, locally grown strawberries & a smooth vanilla cream custard
- Hot herb tea & honey, both from Calleva's garden
Entertainment: Springtime in the Garden will feature the talents of Appalachian Flyer, a fantastic local bluegrass band. These guys can be seen all around the area, playing festivals and events. They are fun, friendly and talented musicians. We know you'll love their sound and hope you'll enjoy a little bit of dancing under the stars!
